The event was originally meant to occur in August at Griffith Regional Theatre and was then moved to a new date mid October to account for the growing outbreak of COVID-19 in Greater Sydney.
According to Griffith City Council, the $50,000 Council put forward to sponsor the event will be carried forward, and they will not accrue any additional costs to host the event on the new yet to be determined date.
Mayor John Dal Broi called the further postponement "disappointing".
"Unfortunately COVID-19 has caused havoc across the country again this year and the Bush Summit is just the latest casualty," Councillor Dal Broi said.
"We are a growing centre and this was an opportunity to showcase the wonderful place Griffith is to live and work," Cr Dal Broi said.

Prime Minister Scott Morrison and NSW Premier Gladys Berejiklian are both still expected to make the journey next year, alongside a number of other politicians and business leaders including Member for Murray Helen Dalton and Minister for Farrer Sussan Ley.
Cr Dal Broi said he was encouraged however that the Bush Summit would still be occurring in Griffith, after two previous delays.
"At least we will still have the opportunity to share with our political leaders exactly what issues we are facing and to showcase to a wide audience how great our city is," he said.
Cr Dal Broi previously told The Area News that he aims to highlight the importance of water in the region and discuss in depth the benefits and drawbacks of the Murray Darling Basin Plan and the ongoing housing crisis that regional communities are facing with relevant national leaders at the event.
Organisers will instead host a virtual Bush Summit next month which will still focus on issues facing regional NSW, but won't highlight the city of Griffith.
