The two launched Grainmother Brewing Supplies in October, running a storefront from the Crystal Arcade on Banna Avenue, catering to all skill levels of brewers. They offer custom recipes and personalised service for any brewers who might need advice or to work through a problem.
Mrs Tai explained that the two had shared the hobby for a long time and wanted to be able to share their love with others, and are determined to compete with brewing shops in big cities like Sydney and Melbourne.
Mrs Tai said "In the country here, you can only get this stuff online. We want to be the equivalent of the shops in those cities so we can grow not only in Griffith but the whole region."
They were both determined to treat the store as a community hub more than a business, describing it as a passion project first and foremost.
The couple have big plans for the scene, with ideals of putting together a brewing competition for Griffith and the surrounding area. Mr Gaffey is a BJCP certified judge, judging at several international competitions. They also have plans to run workshops and classes to help foster the scene.
For beginning brewers, they shared some tips.
"Make sure your fermentation is finished - a lack of activity is not an indication that it's done ... cleaning and sanitation is super important too. They're two different things, people clean and overlook sanitising and then they ask why their brew tastes strange," Mr Gaffey said.
They added that beer is often seen as an all-round thing, but can be seasonal as well. Mr Gaffey recommended darker beers such as stout for the winter months, and lighter ones like lager for summer.
Craft beer isn't the only alcohol the couple are working on, with Mr Gaffey working on the development of Bird nor Beast brewery and Grainmother now experimenting with spirits and other alcohols.
