The creative couple behind the Bird Nor Beast brewing proposal for Yambil street have had their development plans approved, licences granted and the site finally cleared to start construction this year.

"We want to create the kind of place that we want to go to on the weekends. A family-friendly space with good, honest food and beer," Mr Gaffey explained.

"The focus is definitely going to be on the beers. So when you walk in you'll see the brewing equipment, and an industrial style.

"High ceilings with the beams, you'll see a lot of concrete, cement and stainless steel but then the softness of some greenery."

Adam Gaffey and Megan Tai's obsession with brewing started long before they returned to Mr Gaffey's birth place in Griffith two years ago. The qualified chef and food technologist started brewing from his home in Malaysia, where the pair met around 10 years ago.

"I became a bit more obsessed when I started entering competitions in Singapore. I was winning a lot of accolades at the time," Mr Gaffey said.

"I was also travelling around South East Asia judging beer competitions."

The pair have wasted no time in building their dream since returning to Griffith in 2018, launching two businesses in a year, one in particular is having a big impact.

Grainmother brewing supplies opened in September, 2020 selling everything needed to get started brewing from home.

"The response to Grainmother has been really exciting," Miss Tai said.

"There are actually a lot of underground brewers here but it's not something that's talked about.

"It's not like it is in a big city where you have brewing clubs or platforms for people to talk and share ideas and tips."

A home brew club is potentially on the cards, said Mr Gaffey who wants to take Grainmother's momentum and build a community of brewers in Griffith.

"We do all-grain kits with recipes and the comments that we have received have been amazing," Miss Tai said.
