The plan has been a long time in the making for Cathy Sergi, who first started hatching plans to open a Boost franchise in Griffith nearly four years ago.
Boost Juice had run a mobile venture in Griffith for several years to gauge the level of public interest, and now for the first time it will have its first proper storefront.
When the branch opens on Thursday Mrs Sergi will be running it with the help of her 18-year-old son Michael Sergi and 22-year-old Tony Sergi.
Tony will be helping out his mum while also working for his dad at Warburn Estate, and Michael will help run Boost while also studying remotely at Woolongong University due to coronavirus restrictions.
"We really enjoyed going to Boost when we were out of town, and we knew it would do really well here in Griffith," Mrs Sergi said.
"It's a family run business. It's the only way to go. They were pretty excited about coming on board."
Griffith Central centre manager Cheryl Wood said it had been a long-anticipated wait for customers, who had long ago heard rumours about a Boost Juice coming to town.
"Cathy's been trying to get a Boost Juice to open for four years, and we've also been trying to get them to come and open up in our centre," Mrs Wood said.
"It was just a matter of time before everything came together, and we're really delighted to welcome them to the centre."
The Boost Juice will be the second new storefront to open in Griffith Central this month, with a Kaisercraft opening this week and Baby Chopsticks due to open in the coming weeks.
In October another anchor store will soon be opening up in Griffith Central, with The Italian Fresh Mercato opening its fresh food market where the old Ritchies Supa IGA used to be.
It will be an Italian and Mediterranean inspired grocery store which will include a bakery, delicatessen, seafood, meat, and fruit and vegetable section alongside your everyday grocery staples.
The grocery is now hiring, with job recruitment being handled by the Personnel Group Griffith.
