Dossetor proved too good for Sydney visitor James Murrie in a heated men's final, 6-0 6-4, at Jim Elphick Tennis Centre.
The match referee was called to the court three times during the final as Murrie attempted to work his way back into the match after a slow start.
The 23-year-old began serving underarm at times during the second set, while the referee was also called after a number of disputed calls.
Ultimately, the class and cool head of Dossetor came to the fore to clinch his second Riverina Open title in three years.
Dossetor, who only made his Riverina Open debut two years ago, was honoured to win the title again.
"I'm getting a bit older and any sort of win, beating a younger guy, is a pretty big deal," Dossetor said.
"I love playing the game. I just want to be out there. I don't expect too much of myself any more, because I know how much I don't practice so I'm happy just as long as I'm out there."
It was somewhat of revenge for Dossetor, who was beaten in the quarter finals of last year's event at the hands of Murrie.
It was a second consecutive final loss for Murrie, after going down to Sam Fletcher in last year's decider.
Dossetor admitted Murrie's move to underarm serve caught him off guard in the second set.
"I haven't had anyone do that to me before," he said.
"It worked. I admire that. He mixed it up and it worked so good on him.
"I think I was just lucky enough to get away to a really good start, winning the first set 6-0, which kind of lets me play a little bit freer."
Dossetor was a popular winner in Wagga on Monday.
The 35-year-old combines working on the family farm with tennis coaching in Griffith.
He spent four years playing college tennis in the United States, and even toured professionally for a year, before moving back to Griffith a couple of years ago.
The four-day tournament again proved a success with players travelling from across the state to take part in the event.
