Over 120 people entered their best home made salami and it was put to the test by tables of local enthusiasts and experts alike.
This year’s special guest judges included former My Kitchen Rules participants Martino Convertino and Luciano Ippoliti.
Mr Convertino said that he jumped at the chance to be a part of this year’s festival.
“We’ve been invited to be the judges at this festival. I’m so honoured and privileged to do this,” he said.
“I’m really enjoying learning from the experts at my table.”
Each salami was awarded points based on taste, texture and aroma.
“What you normally judge in a supermarket is what you see,” Mr Corsaid.
What I’m learning is that it’s not always what looks amazing that is the best.”
With the festival now in it’s 18th year, the festival has become a staple of the local calendar, attracting visitors from across the Riverina and beyond.
