Whoever it is that takes out the prize will be in for a big pay-day.
First prize will receive $1750, second will get $500 and third place will see $250.
Event organiser Roy Catanzariti is expecting some high quality salami from this year’s competitors.
“Today was the first lot of salami I got in, and couple of people have rang and said they're going to put them in, but I've got about 15 so far today,” he said.
“Even though the salami took a bit longer to mature, because of the cold weather, I'd say they will be really high quality.”
The magnitude of the event was once again on show when the Italian Ambassador to Australia Pier Francesco Zazo decided to join in on the weekend’s festivities.
Mr Catanzariti said the judges this year also provided some big names.
“We have 24 judges this year, four representatives from four major regions of Italy, four Australian and four celebrities,” he said.
“The celebrities this year are Lyndey Milan who is a food critic and she's also written a book.
“There's John Mangos who's a TV presenter, Kim Williams who's CEO of a couple of companies in Sydney including Foxtel and also Phillip Stricker who's a medical specialist from Sydney.”
Tony Sergi will be one of about 140 looking to take out this year’s title and he agreed that the competition will be tough.
“I'd say they'll (salami) be the best we've had for few years,” he said.
“It's been good weather for it so I think it will be very good competition, the judges will really enjoy it this year.”
He said he’d been involved in salami making for over 50 years and has yet to change the recipe.
“I've been doing it for a long time, ever since I was a kid when my father used to do it,” he said.
“We've been doing it ever since I can remember.
“We're still putting in the same ingredients that we did when my father was doing it.”
He said one of the main things to come out of the festival was the camaraderie.
“You make a lot of friends and a lot of the one's that come just love the home-made salami and some used to do it but don't any more,” he said.
Judging takes place on Saturday 29 with the winners announced the next day.
