Following their investigations police have now arrested two men in relation to the assault, which has been described as a "cowardly" offence.
Two men from France, aged 26 and 28, were arrested on Friday.
Griffith Police Inspector Anthony Reneker said police had made a number of extensive enquiries during the week in the lead-up to the arrests.
"Both men have been charged with assault occasioning grievous bodily harm and have been bailed conditionally to appear in Griffith Local Court next month," Inspector Reneker said.
Both men have had their passports seized.
Inspector Reneker praised the efforts of the police involved as well as the assistance provided by members of the public.
"This is a good example of the police working closely with the community to bring about a resolution to a nasty incident," he said.
Griffith City Councillor Paul Rossetto said he was "shocked" by the news of the latest assault.
"I hate to see innocent victims get maliciously injured in our streets," Cr Rossetto said.
"Sometimes young victims, who have a job, can't go back to work for six months - that's just terrible."
Cr Rossetto said tackling violence and drug and alcohol-fuelled incidents in Griffith was not just a job for police.
"As a community we need to be working together with police to make our streets safer," he said.
"Violence is escalating in Griffith, especially certain levels of drug-related incidents are increasing.
"I am very concerned about it."
Cr Rossetto said as part of a new council strategy he was hoping funding will be made available for more CCTV cameras in black spots across the city.
"CCTV cameras seem to be working well as a deterrent," he said.
"To make our streets safer, we should also look at the hours of availability of alcohol at pubs and clubs.'
