So it seems fitting that her latest charity event is expected to be a stellar culinary experience.
The Twilight Dinner will be held at the old Miranda Wines site on Jondaryan Avenue to raise funds for the Griffith Community Private Hospital.
The over 18s, black and white themed event, which was scheduled to be held last October, will now take place on Friday, April 4, with sponsors being sought to help make it a spectacular evening.
"I want to put the call out for everyone in and around the Griffith area to get behind this," Mrs Sergi said.
"The private hospital is a vital community project.
"We have $5000 gold, $1000 silver and $500 bronze sponsorship available.
"It is anticipated that 600 guests from across the region will attend and the aim is to raise $50,000.
"This will be a first for the Griffith community and I hope everyone will get behind it.
"It's going to be a great night."
Mrs Sergi is no stranger to fundraising, last year she coordinated a calendar featuring local women that helped raise around $60,000 for Griffith Can Assist.
With nibbles and champagne on arrival, a three-course meal, fireworks and celebrity entertainment, Mrs Sergi said everything was in place for a top night.
"At this stage the entertainers are a surprise, but we are working hard to make this a night that Griffith won't forget," she said.
"I'd urge everyone to get in and book their tables early.
"We have sourced all local produce for the dinner and local chefs will create the delicious meals."
